Easter is coming, and so is chocolate

Real chocolate is made from cocoa and sugar, then, often to give it a good consistency, soy lecithin. All of these ingredients are safe for the person with celiac disease.
Sometimes malt extract is added, and on the packaging the words “may contain traces of gluten". Manufacturers therefore decline all responsibility for cross-contamination in their workshop. Malt extract or traces of gluten can pose problems for very sensitive people. The mention of malt extract with its origin must be mentioned if the rate gluten exceeds > 20ppm.

Work behind the scenes

How to differentiate between a pre-packaged product and a catering product, what exactly is an ingredient? How to list ingredients for example on small labels, like on spices? All these questions are addressed by experts from around the world and then published in the Codex Alimentarius.
The Codex is the reference for legislation in the food sector. It guarantees food safety, and as we are soon talking about “World Food Safety Day” here is a summary as a reminder to avoid acrylamide.

Ordering gluten-free products

Authentic Italian products can go some way to softening the absence of travel for a year. The delicatessen Sensodivino (established in Luxembourg) offers a gluten-free Italian Colomba Classica for Easter, then gluten-free pasta from the “Le Veneziane” brand. Delivery costs for our members are reduced on the first order.
It is laborious to read the labels of certain products such as soups, sauces and spice blends. A good choice is then to buy these brand products GEFRO, they have a wide range with barred cob.

Low budget recipes

The current exceptional situation requires us to constantly adapt. The price of gluten-free products is high, so it's smart to see how you can change your diet to save money. CERIN has published a brochure of 18 pages with lots of advice, including many recipes with inexpensive ingredients such as chestnuts, legumes etc.
These are all foods that have their place in the gluten-free diet. The recipes are well explained with drawings, so children can also participate in cooking. In the same spirit, a recipe on video to make a simple, inexpensive filled cake.
