Celiac disease and research

The international press has recently produced a number of articles on the progress of research to develop a drug called ZED1227. These articles are titled “The medical treatment Zöliakie-Therapy","Could this new pill be a breakthrough for people living with celiac disease?" or "A very promising new drug against celiac disease”. However, looking more closely, we see that the only benefit of this drug will be (if it is put on the market within approximately 3 years) of being able to eat occasionally a little gluten.

As a reminder, an unrestricted diet contains on average between 9g and 12g of gluten per day according to a large-scale Danish study. Then the average threshold limit for a person with celiac disease is 10 mg of gluten per day. 

Incentive to buy

The end of year holidays are approaching and advertisements are full of exceptional foods presented in an attractive way. Very often we realize that this is just marketing. We throw the flyers and brochures in the blue bin and the matter is done. However, the images have been recorded in our brain. With these images in mind, we go to the supermarkets. Gluten-free mix

We have found 4 “Vanillekipferl” recipes, each time a different brand of gluten-free mix is ​​used. The main ingredients are corn flour and rice flour, guar gum is used as a thickener (except for the Schär brand). However, the proportions of the main ingredients vary, as do the other ingredients in smaller quantities. This means that the result of the recipe in terms of taste, appearance, consistency, etc. is not necessarily identical. And it is likely that mix brands are not exchangeable in recipes.
