We have found 4 “Vanillekipferl” recipes, each time a different brand of gluten-free mix is used. The main ingredients are corn flour and rice flour, guar gum is used as a thickener (except for the Schär brand). However, the proportions of the main ingredients vary, as do the other ingredients in smaller quantities. This means that the result of the recipe in terms of taste, appearance, consistency, etc. is not necessarily identical. And it is likely that mix brands are not exchangeable in recipes.
