Our information day is aimed at all our members and those who want to find out about gluten intolerance. The program will include a conference, stands with tasting and sale of gluten-free products, information stands, a gluten-free buffet, entertainment for children, sale of cookbooks, etc.

Sourdough bread: interest in the gluten-free diet
In Switzerland will take place the first congress on sourdough for bakers. Several conferences refer to gluten-free and sourdough. It is an interesting and innovative topic with the participation of different scientists from Europe. Article from the English newspaper “ The Guardian » dated 23/05/2016 does a good inventory on the implications of the gluten-free diet and sourdough bread.

Buckwheat-almond cake
Recipe made available by “Ourdaller Produkter”.
 
Ingredients
250 g de beurre ramolli
150 g sugar
eggs
100 g sugar
200 cl liquid cream
250 g buckwheat flour 
250 g ground almonds
100 g of jam of your choice
palpable sugar for sprinkling
1 cake pan

Prep time
• Beat the softened butter with 150 g of sugar until frothy.
• Separate the whites from the yolks.
• Add the egg yolks little by little into the butter-sugar mixture.
• Beat the egg whites with 100 g of sugar.
• Incorporate half of the egg whites into the mixture.
• Gently add the buckwheat flour and 250 g of ground almonds.
• Add the rest of the egg whiteseggs.
• Butter and flour a cake mold.
• Distribute the mixture in the mold.
• Place in the oven: 180°C. Cooking time: 45 min.
• Beat the liquid cream with palpable sugar into whipped cream.
• After cooling, cut the cake into two bases and garnish with the jam and whipped cream. 
• Sprinkle with the palpable sugar.
