In spring 2020, the ALIG reviewed its support for training in order to guarantee the maintenance of the quality of gluten-free dishes.

  • The restaurant to be trained designates a contact person, and the ALIG draws up a list with the people present at the training, their names and their functions. A certificate of registered attendance will be distributed at the end with the signature of the trainer and the ALIG representative.
  • The ALIG offers to make a visit at least every 2 years to all the addresses to discuss with the contact person on the realization of gluten-free dishes. A control of the allergen card will be made.
  • ALIG updates the content of the training at more or less regular intervals. Based on the changes made, ALIG will offer an update for some restaurants and other trained establishments. An update will also be offered whenever there has been a change of owner, manager, chef or contact person.
  • ALIG will draw up a contract with the restaurant in which it will be stated in particular that:
  1. ALIG undertakes to provide assistance in the event of questions concerning the allergen menu, the choice of ingredients for gluten-free dishes, etc. Depending on the possibilities, ALIG also undertakes to contact the contact person once a year.
  2. ALIG will send the list of restaurants trained in Food Safety every year. A procedure for checking a gluten-free dish will be put in place, either with the official authorities or with an approved laboratory.
  3. The trained restaurants are listed with their names and addresses in the ALIG restaurant guide. For the contribution of 25 € per year, the trained establishments can add a logo or a photo on the ALIG website.
  4. The manager of the restaurant undertakes to inform the ALIG of the departure of the contact person as well as the possible change of owner or chef.
  5. The costs of a first training are offered by the ALIG. In the event of non-compliance with the instructions, or repeated errors, additional training will be required, the costs of which will be payable by the establishment concerned. In the event of refusal of payment, ALIG reserves the right to revoke the establishment's contact details on its website or in its restaurant guide.
